SPICE BREAD

This type of quick bread is a staple when it comes to holidays and chilly weather. There is no kneading involved, the batter is simply mixed together, poured into a loaf pan and baked. You can serve it with a bit of butter and jam, or clotted cream and jam, you can toast it and serve it as a sweet breakfast, whichever way you want.


Ingredients
300 grams plain flour
100 grams brown sugar
150 ml milk
100 ml oil
3 teaspoons baking powder
2 medium eggs
1 teaspoon cinnamon
½ teaspoon ground ginger
¼ teaspoon nutmeg
¼ teaspoon ground cloves

Preparation
Sift the flour with the baking powder and the spices, and set it aside. Briefly whisk together the eggs and brown sugar, just until you get a creamy batter, then pour in the oil and combine it well. Add the flour mixture and milk in a few additions, starting and ending with the flour, and mix everything really well. Pour the batter into a small loaf pan (13x23 cm, 9x5") lined with baking paper and bake in a preheated oven, at 180˚C (350˚F), for 35-40 minutes. Leave the baked bread in the pan for 10-15 minutes, then take it out and let it cool completely on a wire rack.
