TINA'S APPLE TRUFFLES

These have been my absolute favourites ever since I developed the recipe. Very simple and easy to make, yet so very delicious. They take a bit of time to cool down, but they keep well and they are easily transported, which makes them an excellent edible gift. The flavour is very fresh, very mildly lemony, so if you are a fan of apples and spice combination, you will love these.

Ingredients:
350 grams peeled, cored, grated apples
200 ml cold water
30 grams cornstarch
60 ml (4 tablespoons) fresh lemon juice
2 tablespoons honey
2 teaspoons grated lemon zest
1 teaspoon unsweetened cocoa powder
1 teaspoon vanilla
¼ teaspoon ground cloves
250 grams ground cocoa biscuits
50 grams finely ground walnuts
1 teaspoon unsweetened cocoa powder

Preparation:
Peel, clean and roughly grate the apples (sweet eating apples, like Golden delicious), put them in a heavy-bottomed pot, and cook over medium heat for 5 minutes. Add the lemon juice and zest, along with the cocoa and ground cloves, then cook for 5 minutes more, stirring constantly. When the apples have thickened up slightly, mix the cornstarch with the cold water, pour it in the apples and cook for 3-4 minutes, until thickened.
Remove from heat and let it cool down slightly, just for a minute or two, then add the honey and vanilla and stir well. Gradually add the ground biscuits, mixing with a wooden spoon, until completely incorporated. Let it cool down for about 10-15 minutes, then take out tablespoons of the batter, form the truffles and roll them in the ground walnut and cocoa mixture. Allow to sit overnight in the fridge before serving (yields 25 truffles). © Tina Vesić
