SPICY PIZZA CRACKERS

Ingredients:
200 grams flour
100 grams cottage cheese or Ricotta cheese
100 grams softened butter
4 tablespoons ketchup
2 egg yolks
1 teaspoon salt
½ teaspoon dried oregano
½ teaspoon crushed red chilli flakes
½ teaspoon black pepper
½ teaspoon baking powder


In a large bowl, place softened butter, cheese and all of the spices, and blend really well with an electric mixer. Add the ketchup and yolks, and blend well again. Sift the flour with the baking powder, add half of it to the butter batter, mix well, then add the rest a bit at a time, mixing the dough first with a wooden spoon, then with your hands, until you get a soft, pliable dough that doesn’t stick to your hands.
Roll the dough out on a lightly floured surface, keeping it under 5 mm (¼") thickness, then use a small cookie cutter (1 inch in diameter) and cut out the crackers (I got 70 of them). Place them on a baking sheet lined with baking paper, and bake in a preheated oven, at 200˚C, for 8-10 minutes.
