CINNAMON RUM CAKE

Cinnamon and rum are a great combination. When you add sweet strong coffee to that, it makes it even more fabulous. This cake is very moist and tender, soaked completely in coffee and rum. It is also flourless and it uses semolina and cocoa powder instead. Make sure you brush the cake slowly with the coffee, because if you pour it all in one place, it will turn mushy. Keep it refrigerated until serving to ensure it stays completely moist.

Ingredients:
4 large eggs
250 grams potatoes (cooked and slightly cooled)
200 grams sugar
1 lemon (zest only)
4 tablespoons cocoa powder
4 tablespoons semolina
3 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon vanilla extract
1 teaspoon rum extract
250 ml sweetened coffee
3 teaspoons rum

Preparation:
Beat the egg yolks with the sugar with an electric mixer until pale and thick, about 5 minutes on high, then add the grated lemon zest. Pat dry the cooked potatoes, then mash completely, and mix it well with the yolks. Add the semolina, sifted cocoa powder, cinnamon, extracts and baking powder and combine well. Beat the egg whites on high until stiff peaks form, then gently fold it in the batter.
Line a spring form pan (23 cm; 9") with baking paper and grease the sides well, then pour in the batter and bake, in a preheated oven, at 180˚C, for about 25-30 minutes. Check it with a toothpick to make sure it doesn't overbake. Let it cool for about 15 minutes in the pan. When the cake is slightly cooled, brush soak it well with a mixture of sweetened strong coffee and rum. Place it in the fridge overnight. Serve well chilled with whipped cream or ice cream.     1. Mogu ti reći da ni neki znatno iskusiniji (od obe od nas :)) u kuhinji nisu verovali da ima krompira u kolaču :)

  6. Mmmm, kod tebe sve neki fini kolacici, ne bih nikada rekla da u testu ima krompira, sad me bas kopka kakvog je ukusa, ali verujem da se ne oseti toliko zbog kafe i ruma.:))

    Tamara, mislim da krompir, pored toga što daje sočnost, menja masnoću (maslac, margarin) koja bi išla u tortu :)
