WALNUT COOKIES

Ingredients:
150 grams all purpose flour
100 grams ground walnuts
50 grams cornflour (corn starch)
1 teaspoon baking powder
½ teaspoon baking soda
50 grams softened butter
50 grams sugar
1 egg
1 tablespoon dark rum
100 grams dark chocolate


Beat the softened butter with the sugar until light and fluffy (about 2-3 minutes on high should be enough), add the egg and blend very well. Add the ground walnuts and rum and mix just to combine. Sift the flour with the cornflour (corn starch), baking powder and baking soda and add it to the butter batter in a few additions, beating constantly on low. You should get a lovely soft dough that you need to chill for about 15 minutes in the fridge (put it in the fridge in the bowl you made it in).
Transfer the chilled dough to a lightly floured surface and roll it out to about 5 mm (under ¼") thickness and cut out the desired shapes. Bake them in a preheated oven, at 180˚C (350˚F) for 8-10 minutes, making sure they don't overbake.
Leave the baked cookies to cool down and make the dark chocolate glaze. Melt and temper the chocolate, pour it in a deep and narrow container and dip in the cookies half way up. Let them sit on a wire rack or a silicone mat until the glaze sets. Serve them with tea or strong coffee. Yields 25 cookies.
KEKSIĆI SA MLEVENIM ORASIMA

Sastojci:
150 gr brašna
100 gr mlevenih oraha
50 gr gustina
1 kašičica praška za pecivo
½ kašičice sode bikarbone
50 gr omekšalog maslaca
50 gr šećera
1 jaje
1 kašika tamnog ruma
100 gr crne čokolade

Omekšali maslac umutiti sa šećerom dok masa ne postane potpuno kremasta (2-3 minuta na najjačoj brzini će biti dovoljna), dodati jaje i dobro sjediniti masu. Tome dodati mlevene orahe i rum i umutiti mikserom. Brašno i gustin prosejati sa praškom za pecivo i sodom bikarbonom pa ga dodati u prethodnu masu u par navrata, muteći minimalnom brzinom sve vreme. Dobiće se mekano testo koje treba ostaviti u frižideru (u posudi u kojoj se mutilo) nekih 15 minuta.
Ohlađeno testo premestiti na radnu povšinu blago posutu brašnom, razvaljati ga na nekih 5 mm debljine, pa seći kolačiće željenih oblika. Ostatke testa premesiti i ponovo razvaljati, te ponavljati postupak dok se ne utroši testo u potpunosti (dobije se 25 keksića). Peći keksiće u unapred zagrejanoj rerni, na 180˚C, 8-10 minuta, pazeći da se ne prepeku.
Ostaviti pečene keksiće da se hlade, a u međuvremenu pripremiti glazuru od crne čokolade. Čokoladu usitniti, pa je otopiti lagano na pari, sipati je u dublju i užu posudu, umakati ohlađene keksiće do pola, pa ih ostaviti na žici ili papiru za pečenje da se čokoladna glazura stegne.
