DOUBLE CHOCOLATE COCONUT COFFEE CAKE

Ingredients:
For the cake
100 grams all purpose flour
100 grams sugar
100 grams desiccated coconut
2 tablespoons unsweetened cocoa powder
100 grams butter
100 ml hot coffee
150 grams Greek yogurt
1 egg
1 teaspoon vanilla
1 teaspoon baking powder
½ teaspoon baking soda
100 grams dark chocolate
For the homemade chocolate Mascarpone icing
150 grams softened butter
100 grams Mascarpone cheese
2 tablespoons unsweetened cocoa powder
50 grams instant chocolate pudding powder
50 grams icing sugar
3 tablespoons heavy cream
1 teaspoon vanilla


Sift the flour, baking powder and baking soda in a large bowl, add sugar and coconut and whisk together. Melt the butter in a heavy bottomed saucepan, over medium heat, add the cocoa and stir together. Turn the heat to low and cook this mixture for a minute or two, to completely dissolve the cocoa. Pour this over the flour mixture, add the hot coffee and quickly whisk to combine. In another bowl, whisk together the Greek yogurt, egg and vanilla, then pour it in the flour mixture and blend well with a whisk. Finally, stir in grated dark chocolate. Grease and flour your baking pan (23x30cm; 9x13"), pour in the batter and bake in a preheated oven, at 180˚C (350˚F), for about 20 minutes. Let the cake cool down completely before frosting.


With an electric mixer, beat together the softened butter and Mascarpone for about 3 minutes on medium speed, or until very smooth. Scrape down the sides of the bowl and beat 2 more minutes. Add the vanilla extract and mix it well. Tip in the cocoa powder and instant chocolate pudding powder and incorporate really well, on high, then slowly add the icing sugar in a few batches. Finally, add the heavy cream and blend well. Makes enough to frost one 9x13 cake or 12 large cupcakes.
ČOKOLADNI KOLAČ SA KOKOSOM I KAFOM

Sastojci:

100 gr brašna
100 gr šećera
100 gr kokosovog brašna
2 ravne kašike gorkog kakao praha
100 gr maslaca
100 ml vrele kafe
150 gr Grčkog jogurta
1 jaje
1 kašičica vanile
1 kašičica praška za pecivo
½ kašičice sode bikarbone
100 gr crne čokolade
Za krem
150 gr omekšalog maslaca
100 gr Mascarpone sira
2 ravne kašike gorkog kakao praha
50 gr instant pudinga od čokolade u prahu
50 gr prah šećera
3 kašike slatke pavlake
1 kašičica vanile

Najpre brašno prosejati sa praškom za pecivo i sodom bikarbonom, sipati u veliku činiju, dodati šećer i kokos i promešati žicom. Maslac otopiti na srednje jakoj vatri, dodati kakao, smanjiti temperaturu i kuvati minut-dva, da se kakao potpuno rastvori. Sipati otopljeni kakao, dodati vrelu kafu i mešati žicom da se masa ujednači. U drugoj posudi žicom umutiti jaje, vanilu i grčki jogurt, dodati prethodnoj masi i izmešati da masa postane ujednačena, te na kraju umešati rendanu crnu čokoladu. Kalup za pečenje (23x30 cm) premazati maslacem i pobrašniti, sipati masu i peći u unapred zagrejanoj rerni, na 180˚C, 15-20 minuta.
Mikserom mutiti omekšali maslac i Mascarpone sir srednje jakom brzinom oko 3 minuta, da se dobro sjedine i masa postane potpuno kremasta. Spatulom skinuti masu sa zidova posude, te mutiti još 2 minuta, da se masa potpuno ujednači. Tome dodati vanilu i sjediniti. Dodati kakao i instand puding prah i dobro umutiti, a zatim postepeno dodavati prosejani prah šećer, muteći sve vreme najjačom brzinom. Na samom kraju dodati slatku pavlaku i umutiti. Potpuno ohlađeni kolač odmah dekorisati kremom i služiti (dobije se dovoljno krema za dekoraciju jednog 23x30 cm kolača ili 12 velikih mafina).
