CREAM OF POTATO SOUP

Ingredients:
500 grams potatoes
200 grams carrots
1 onion
50 grams butter
2 tablespoons all purpose flour
1.2 litre vegetable bullion
200 ml whole milk
100 gr minced prosciutto
100 grams Gouda
½ teaspoon black pepper
½ teaspoon dried parsley flakes
pinch of granulated garlic
pinch of crushed red pepper flakes


Start by dicing the potatoes and carrots and slicing the onion thinly. Melt the butter in a large heavy duty pot over medium heat, tip in the onions and minced prosciutto, and cook until the onion becomes translucent, then tip in the rest of the vegetables. Season well and cook, stirring often, for about 5 minutes or so. Pour 1 litre of the vegetable bullion, bring it to a gentle boil, partially cover the pot and cook for about 30 minutes. When the vegetables are tender, remove it from the pot and completely puree it in a blender. Be careful and blend by pulsing, because of the heat. Pour it back to the pot, add the rest of the bullion, and in a separate small bowl, whisk together the cold milk and the flour, whisk it in the soup and cook for another 5 minutes. Remove from heat and stir in grated Gouda. Stir until completely melted, taste for seasoning and serve immediately. Yields 4 large servings.
KREM ČORBA OD KROMPIRA

Sastojci:
500 gr krompira
200 gr šargarepe
1 crni luk
50 gr maslaca
2 kašike brašna
1,2 l povrtnog bujona
200 ml punomasnog mleka
100 gr sitno seckane pečenice
100 gr Gaude
½ kašičice crnog bibera
½ kašičice sušenog peršuna
prstohvat belog luka u prahu
prstohvat mrvljene ljute paprike

Najpre naseckati krompir i šargarepu na kockice a luk na tanka rebarca. Otopiti maslac u dubokoj šerpi na srednjoj temperaturi, dodati luk i pečenicu, pa dinstati da luk postane staklast, zatim dodati ostatak povrća, začiniti i dinstati uz mešanje oko 5 minuta. Sipati litar bujona, pustiti da provri, delimično poklopiti šerpu i pustiti da se kuva oko 30 minuta, da povrće omekša. Kada je povrće omekšalo, izvaditi povrće iz supe i ispasirati ga u potpunosti u blenderu u par navrata. Vratiti pasirano povrće u šerpu, dodati ostatak buojna, a u posebnoj maloj posudi umutiti brašno i hladno mleko, sipati u supu i kuvati još 5 minuta, da se zgusne. Skinuti s vatre, dodati rendanu Gaudu i mešati da se sir otopi u potpunosti. Probati supu i dodatno začiniti po želji i služiti odmah (4 velike porcije).
