CHOCOLATE & COCONUT MUFFINS

Ingredients:
120 grams flour
200 ml yogurt
100 grams dark chocolate
50 grams honey
50 grams desiccated coconut
2 tablespoons oil
2 tablespoons cocoa powder
2 eggs
2 teaspoons baking powder
1 teaspoon vanilla


Beat together the egg and honey, add the yogurt, vanilla, cocoa powder and desiccated coconut; blend well and set aside. Melt the chocolate with the oil, in a double boiler or in the microwave, and set it aside to cool a bit. Pour the melted chocolate into the egg batter, gently fold it in, then add the flour sifted with the baking powder and blend well with a wooden spoon or a spatula. Pour the batter in muffin cups lined with muffin liners and bake in a preheat oven, at 200˚C (395˚F), for 12–15 minutes.
MAFINI SA KOKOSOM I ČOKOLADOM

Sastojci:
120 gr brašna
200 ml jogurta
100 gr crne čokolade
50 gr meda
50 gr kokosovog brašna
2 kašike ulja
2 kašike kakao praha
2 jaja
2 kašičice praška za pecivo
1 kašičica vanile

Jaja umutiti sa medom, dodati jogurt i vanilu, dobro sjediniti, pa umešati kokos i kakao i ostaviti sa strane. Čokoladu otopiti sa uljem (na pari ili u mikrotalasnoj), pa je ostaviti da se malo prohladi. Sjediniti ove dve mase laganim mešanjem (spatulom ili varjačom), pa dodati brašno prosejano sa praškom za pecivo. Podeliti masu na 12 korpica za muffins, pa ih peći u unapred zagrejanoj rerni, na 200˚C, 12-15 minuta.
